Given plenty of extra time to develop their red, marbled meat with incredible depth of flavor and taste, we then use traditional family recipes, salt and time - no nitrates, no celery powder - to dry cure the finest Connecticut-made Soppressata Salami for you and your family. Nicely spiced, medium hot, coarse cut, handmade, local "SuperSata" in two different casings! Our "SuperSata" Large is cured in a 1 1/2" natural beef casing approximately 1 lb. Our "Pepperoni" small is cured in a 1" natural Hog Casing, just under 1 lb for most packages.
